    Boil not cooked all the way,just to take meat of bone,then wok stir fry with veggies of your choice.Tricked my "exquisite taste" EX wife into 2 servings,look on her face was priceless.

      I put some Earl Campell rub on them Staurday, put them in a roasting pan with a little water, cooked for about 3hrs at 300 degrees, removed and pulled the meat of with a fork and made squirrel burritos. They were pretty darn good.

                        This is my collection. Still waiting for another squirrel to add a dumpling recipe. Our favorite is the fried, but the Ѐcureuil au Vin Blanc {Or Squirrel in White Wine} was pretty good, too, especially soaking up all that sauce with some thick bread.

                              I like to put it in the oven with potatoes in a dish. My son likes them fried . I once tried mixing rabbit , squirrel and dove in a big pot with potatoe, tomatoe , season all , salt pepper and celery with carrots . I know it's a lot but it was really good. I believe the dish is called burgoo.

                                Pressure cook, pull all meat off, dip in egg and milk and fry for a few minutes, prepare gumbo base, u can use zatarains or your own, add chopped red onion, garlic, sweet corn, okra, rotel tomatoes with diced green chilies, chopped diced jalapenoes, simmer and then add fried squirrel meat. Top off with chives and pour over steamed rice.
