    Slow Cooker Chicken Tortilla Soup

    It's just a standard recipe from Campbell's but I'm trying it out and will let ya know how it goes....



    SLOW COOKER CHICKEN TORTILLA SOUP

    What You'll Need

    1 cup Pace® Picante Sauce
    2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken Soup
    1 pound skinless, boneless chicken breasts, cut into 1/2-inch pieces
    2 cups frozen whole kernel corn
    1 can (about 15 ounces) black beans, rinsed and drained
    1 soup can water
    1 teaspoon ground cumin
    4 corn tortillas (6-inch), cut into strips
    1 cup shredded Cheddar cheese (about 4 ounces)
    1/3 cup chopped fresh cilantro leaves


    How to Make It

    Stir the picante sauce, soup, chicken, corn, beans, water and cumin in a 4-quart slow cooker.

    Cover and cook on LOW for 4 to 5 hours or until the chicken is cooked through.

    Stir the tortillas, cheese and cilantro into the cooker. Cover and cook for 15 minutes. Serve with additional cheese, if desired.



    I added a can of rotel with cilantro & lime and went for 1.5#s of chicken

    Ended up being very good, very filling! Great cold weather dish.

    I also added a 7oz can of San Marcus pickled jalapeños with carrots & onions. I stewed the jalapeños in the crockpot with the soup while cooking but took them out to serve. It was pretty spicy.

    Two thumbs up. Makes a lot.

      I like to experiment.

      With this recipe, I would try replacing the whole kernel corn with white hominy.

            Yeah, I ended up using this instead. The taste of Pace ruins everything IMO.

              One of the better ones I've found at the store is at Kroger.... "Private Selection" Restaurant Style. It's cheap and good.

                I LOVE soup!!! This recipe sounds good. I'm going to try it today with left-over turkey.
