    Deviled Jalapenos with bacon

    I do not like egg whites in Deviled Eggs, so I substituted Jalapenos for the egg white. I think it turned out great and so did the Boss (my wife). I used 2 strips of bacon, but I will probably use 4 the next time and sprinkle half on top .

    6 boiled egg yolks
    5-6 Jalapenos - Cut in half and deseeded
    3-4 strips of bacon . Fried and chopped into small pieces.
    2 slices chopped Onion (finely chopped).
    5 Tbls. Mayonnaise
    1 Tbls. Mustard
    1 good squeeze from a fresh lemon
    Salt and Pepper o taste.
    Sprinkle paprika on top

            I've got a ton of jalapenos this year. I've pickled them and done poppers on a grill a few times. This looks great. Thanks for sharing.

                      All I did with the peppers was split them in half, de-seed them and wash them out thoroughly.
