I just pan fry mine with a little butter . Season with Tony's or blacken . Then I make the sauce but use sour cream instead of mayo . Top with avocado and slaw
I love me some fish tacos and nearly overdosed on them when I lived in San Diego. It is debatable whether the Baja fish taco originated in San Felipe or Ensenada. I side with the ladies from Ensenada and use this recipe that supposedly came from a taco cart operator in the area. It's the real deal. It also includes recipes for some taco sauces to compliment the tacos, including the standard fish taco white sauce as well as an avocado sauce, a classic pico de gallo, and a chile de arbol hot sauce. The web page is a train wreck in the way the recipes are laid out, but if you can make sense of it all you will end up with some awesome fish tacos. I make the sauces ahead of time so they are all ready to go. Plus, the sauces taste better after the flavors have some time to mix together.
