Crawfish Pie

    Crawfish Pie

    After reading a recipe on here for crawfish pie, I decided to make one. I modified the recipe a fair bit due to liking certain ingredients and not liking others. It was pretty darn good, to say the least.

    Here is the recipe I came up with:
    • 8 ounces crawfish tails
    • 8 ounces shrimp (use the baby cold water shrimp)
    • 1 cup diced white mushrooms
    • 3/4 cup chopped onion (yellow or white)
    • 1/2 cup diced celery
    • 1/3 cup diced asparagus
    • 1/4 cup diced carrots
    • 1/4 cup butter
    • 1 teaspoon of cajun spice
    • 1/2 teaspoon of cayenne pepper
    • 2 9" pie crusts (1 for the bottom and one for the top)
    • 1 cup water
    • 2 tablespoons of flour


    Steps:

    Put the butter, veggies and spices in a large pan and cook for 5-6 minutes on medium heat. Veggies should be tender, but not fully cooked yet.

    Add crawfish and shrimp. Reduce heat and simmer for 3-5 minutes

    Mix flour and water in bowl, stir until blended well (no lumps).

    Add flour mix to skillet; simmer and stir until mix begins to thicken (5 -6 minutes)

    Remove from heat and allow to cool and thicken more.


    Preheat oven to 400 degrees

    Once mixture has cooled down to a luke warm temp, add mixture to pie crust.

    Fill up the pie crust almost level with the top.

    Roll out 2nd pie crust and place over top of mixture. Crimp the edges to form a nice seal

    Cook at 400 for 20-30 minutes until pie crust is golden brown.

    Remove and let sit for 15 minutes. This is allows it to be cut like a pie.

    as long as it was good, that's all that matters

        Yep... Looked a lot like the frozen pies I ate as a kid 30 yrs ago.

                  try using a good dark roux instead of water and flour and clam juice for any needed liquid. You can use any vegetables that you want, but the trinity of celery, bell pepper, and onion is all you need. Like a good thick gumbo in a pie shell.
