    need queso recipe

    I need a killer queso recipe....me and my wife LOVE queso and were wanting an awesome recipe. One of the best ones we have ever had comes from a mexican food place in San Anton called Pericos, it has meat, potatoes, pico, and guacamole all in the queso....man is it good. So maybe something like that if someone has something like that, we like jalapenos and spice too, just not too spicy for a queso, anyone?

    I use the block of velvetta cheese, rotel chillis and a 1 LB of Chorizo. Cut the cheese (LOL) Pun Inteded. Threw it in the crock pot with a can of Rotel Chillis, then fry the Chorizo then put it in the crock pot with everything else.

        1-block velveta
        1-can rotel
        1/2 can refried beans
        1-lb breakfast sausage.

          This is darn good. I make the same.

          A quick tip. When you are browning the Chorizo add a little beer to the pan while you are browning it. It helps the chorizo break up a little better.

            Everyones tastes are different but here is the basic comcept!!

            Now what I do is:

            Velvetta
            Tomatoe
            Onion
            Jalapeno
            Cilantro
            Lime
            Chorizo
            Potatoe


            Brown Chorizo (do not drain)
            Add Diced Onion, Jalapeno and Diced Potatoe to the Chorizo
            Add Diced Tomatoe to the cooked mix
            Add Juiced Lime and Chopped Cilantro
            (micro melt the velvetta with 8oz of water mixed in)
            Add the melted cheese substance to the cooked stuff
            (I add a touch of creole seasoning, little more heat and salt)

            Serve with your favorite chips over enchiladas, eggs.....

              Jimmy Dean Hot pan sausage, brown hard, then add yellow onions and fresh jalapeno, Tony C's, little chicken stock, and when onions are clear add Velveeta in chunks. Low heat and do not cover (trust me).............can be put in a crock pot at this time

                I do this. Sometimes I throw in some taco seasoning as well

                  I block velvetta, 1/2 cann rotel and 4 ozs of spicy garlic buffalo wild wings sauce or your favorite wings sauce and 3 chicken breast cooked ans shredded fine. Combine in a crock pot and makes dang good buffalo cheese queso.

                      Roast some pablono peppers, melt butter and flour in pot to make a blond roux. Next put in chopped peppers, chili powder, salt, white pepper, minced garlic and onions. Add mild cheddar cheese, let melt then add 1/2 and 1/2 until you get the consistency you want, adjust seasonings

                        1 lb breakfast sausage browned
                        1 block velvetta
                        1 can rotel hot
                        1 can cream of mushroom
                        throw in crockpot. Melt, mix, done

                          American cheese is the key.
                          you used to be able to buy it in blocks next to velvetta, now i just buy a 1lb from the deli area.

                          get a lb of american cheese
                          some green onions
                          regular onions
                          saute the green onions and regular onions in skillet
                          at them to a pot or crock pot with the cheese and about a cup of milk to thin it out.

                          This is a good queso recipe. You can add rotel to spice it up but it is great on its own.

                            I've heard this as well. That a lot of Mexcan food places that use American cheese. I know a lot of people like the casa ole' queso, and I talked to a guy that works there and he said the key is American cheese, they use land-o-lakes, but from what i've heard American is the ticket. Saute celery, bell pepper, onions and jalepeno in a pan with butter, add a little bit of milk, then add the chesee and continue to stir as it melts.. Then of course you can make fresh guac, pico, etc. to add into it.

                              I'm happy to see a recipe that does not use pasteurized cheese!!!! Don't get me wrong, all queso is pretty good but I myself don't like Mexican food that tastes like a 90 year old white woman cooked it....
