Pinto beans: Clean and sort, rinse with water. Soak over night in the frig, add a little salt and ground black pepper, slices of salt pork, a bay leaf, some brown sugar, hot sauce.
I think the key is just soaking them over night then add what you like. Cook them until they boil then simmer. You can tell when they are done when you dip one out, blow on it to cool it off and the skin will curl up.

I compete in Dutch Oven and Campfire cooking. I have 2 ways that I fix beans.
Sort, clean, and soak beans overnight.
#1Salt, black pepper, diced jalapeno(seeds and all, no stems),chopped garlic, chopped onion, and celontro.
#2 Salt, black pepper, chopped garlic, when beans are almost done pour the chili powder to em till juice is fairly thick and finish cooking.
I use thick sliced hickory smoked bacon or if I can find some real lean salt pork in both
