    How do y'all cook your duck?

    I'm new to duck hunting and was wondering how y'all cooked yours. Looking for ideas. So far I have grilled, chicken fried, made stir fry, and fajitas. My sons and I thought it was all good. I always soak mine in a brine to draw the blood out, then marinate for 24hrs.

    I like to breast them out, basically just cutting the breast meat out. It will give you 2 chunks from each duck. Put 1/2 of a jalapeno or a chunck of onion on it, wrap it in bacon and put a toothpick through it to hold it together. Put on the grill. GOOD STUFF!

      Season and cook like you would a steak (not more than medium rare). Also, a good marinade is soy sauce, palm sugar, and lime juice that will give it an Asian flare. Also, if the skin is on the duck, pan sear skin down on medium heat. Once the skin is turning brown and crispy turn over. Then mix orange or peach marmalade/preserves with seasoning and poor over the crispy duck. Duck is good stuff! Enjoy!

        salt,pepper and sear....put in pot with red wine and cover.....cook till meat will fall off the bones.....serve meat with the gravy over rice....

            Uhg, give it to somebody that eats it? I've never heard a duck hunter say he hunts ducks to eat them !!!

                A buddy of mine made a duck gumbo that was really good. Ive been hassling him the past couple weeks to make more.

                Also like to cook it like pot roast in the slow roaster with mushrooms and carrots with a side of mashed potatoes.

                  Gumbo is always good. Soak in soy sauce/olive oil wrap with bacon/jalapeno & grill. For shovelers and other bottom feeders I grind and feed to my dog...he has never complained.

                    I soak mine in butter milk and italian dressing over night. I then wash the marinade off, dip in milk and egg, batter in flour with fajita seasoning, and cook like backstrap...You won't be disappointed! I have converted many people. I use to say I did not like duck at all.

                      I do this, but I soak it in Zesty Italian Salad Dressing (2-8 hours) and then baste it in apricot jelly.

                        Breast out, soak in butter milk over night. Then marinade is soy sauce, salt and pepper for a few hour. After that I cook just like dove. Wrap with bacon and jalapeno in the middle and grill medium rare.

                          Soak in Dr Peper. Pound flat with tenderizer (1/4") maybe. Oil oil in a skillet and fry hot in fast in cajun fish batter.

                            Don't know if it was said yet. But I cut meat off the breast bone and freeze it in Italian dressing and Worcestershire. Then chicken fry it. Pretty darn good.

                              My buddy took his to a processor and they made sausage. 50-50 duck/pork. VERY good. He also bleeds his out real good in fridge with water in a ziploc. Changes water out daily.
