    Venison cheese stuffed meatloaf...

    Going to give this a try this week...

    2 lbs ground venison
    2 eggs
    1 can seasoned tomato sauce
    2 tbsps liquid smoke
    1/2-1 cup dry onion flakes
    1 cup bread crumbs
    8 slices mozz, swiss, pepper jack cheese ( your choice)
    8 slices 97% fat free ham

    Large bowl mix liq smoke, onion, 3/4 tomato sauce and bread crumbs. Add extra bread crumbs if needed, the mix needs to be firm. After mixing together place meat mixture on foil, plastic wrap, or parchment paper and flatten out to about 1/2 inch think but only as long as your loaf pan. After it is rolled out place cheese and ham then roll up like a jelly roll. With seam on top place like loaf pan over the top and flip into pan. Do this however u can as long as the seam is in the bottom of loaf pan when ready to cook. Pour the rest of the tomato sauce on top. Place loaf pan on top of cookie sheet to catch dripping just in case it over flows. With it being deer meat I know there is not to much fat but this is a just in case. Bake at 325 for 60-75 mins until done. I myself will change a few thing to make it my own just because I know what my family will and will not eat. Plus I like fresh onions and bell pepper in my meat loaf... hope this turns out good...

                OK made this tonight for dinner, told u I would change a few things... I use pepper jack cheese, prosciutto, Worcestershire sauce, real onions and panko breads crumbs. I will say its a great twist on the boring meatloaf...just dealing with a hubby that for some reason can't get by the deer taste in burger or chili grind but loves the taste of deer steak..hmmm not sure what to do about him lol...

                  Umm excuse you, but i LOVE your DEER CHILI... And LOVE me some deer jerky.... Maybe its just the hamburger grind...
