    Low carb cookie substitute

    OK, every time someone says something about dieting, some smart butt has to get on here and say something about how their method is the "right way". Well, Ide appreciate it if you would hold thos comments to yourself. Thanks.


    For those of us that find the low carb diet works for you, I have a treat for you. You dont have to be deprived of all sweets. I found a decent cookie substitute recipe that tastes really good.

    3 egg whites
    1/8 teaspoon cream of tartar
    1/2 teaspoon vanilla extract
    2/3 cup Splenda granular
    1 tablespoon unsweetened cocoa powder
    1 large handful of chopped pecans

    1. Beat egg whites, cream of tartar, and vanilla to a froth with soft peaks.
    2. beat in the Splenda and cocoa a little at a time and beat until the peaks are stiff and the mixture has a high gloss to it.
    3. Fold in the pecans with a few light strokes.
    4. flop the mix on a greased cookie sheet a spoonful at a time
    5. Bake at 300 for 30 minutes.

    I was skeptical, but they are like little drops of heaven. Kinda like a fluffy chocolate chip pecan cookie crossed with a cloud.

    I know that sounds fruity, but they sure made this fat boy happy after dinner. Hopefully now I can stick to the diet this time.

          stick with the lo-carb diet, i've lost 40lbs since july and still dropping !
