          im not a fan of duck. I havent shot a duck in years until last weekend. I decided to give this a try and I have to admit, it was pretty da*m good.

                        I do something similar to this except season with lemon pepper instead, lots of lemon pepper, and let set at room temperature for a hour or so before cooking. Then cook med rare in unsalted butter.
