ok, time for another pizza thread...this time I will actually throw out how I do my dough.
this should be enough dough for a 16"-18" pizza
what you'll need:
2 1/4 cups of flour
1 tbsp salt
1 pack of rapid rise yeast
3 tablespoons of olive oil
1 teaspoon sugar
In a mixing bowl, add 2 1/4 cups of flour, then in your large measuring cup put 3/4 cup of warm water (100ºf-110ºf), 1 packet of yeast, add 1 teaspoon of sugar, stir and let sit for about 10 minutes.
Add yeast mixture to mixing bowl of flour, add 3 tablespoons of olive oil and 1 tablespoon of salt to mixture, mix thoroughly and knead for a few minutes.
Heat the oven for about 30 seconds then shut off, put dough in oven for about an hour to let rise. After an hour, remove dough and punch down, put in plastic container or wrap in plastic bag and put in refrigerator over night.
About an hour before you intend to use dough, remove from fridge and let sit on counter for about an hour. (at this point, heat up oven to about 400ºf) Put dough on flour dusted surface and roll out to desired size, add all ingredients to pizza.
Cook in oven at 400 for about 15-20 minutes (depends on actual oven), checking on toppings and dough to make sure not getting over cooked.
There are tons of variations on this, play with it as you see fit, trial and error.
