    Chili Recipe

    I am looking for a good chili recipe! We are just now getting cold weather and I want to try and make some good chili. Not some gross 2 alarm chili... I’m talking about low and slow good chili that you would use in cook offs and stuff. I have never made chili before and I like to cook so I need somewhere to start. So anyone that has a good "secret" recipe that wants to share it with me this would be greatly appreciated.

    I've used this recipe several times and it's always a big hit. Some other good ones on this site as well.

      I used to make detailed chilli, but then the wife showed me her mom's recipe and I put a couple tweaks in it and has become some of the best chilli

      2# ground meat
      1 can diced tomatoe
      1 can tomatoe sauce
      1 can ranch beans
      Garlic powder
      Chili powder
      salt/pepper to taste

      brown the meat, throw everything else in and let it simmer for 15-20 min while your baking the cornbread.

        Ingredients:
        Two pounds chili meat (preferably venison or moose. Have also used dove)
        1 tablespoon salt
        2 tablespoons olive oil
        One green bell pepper chopped
        One red bell pepper chopped
        24 oz. Pace Chunky salsa (I prefer Hot, usually medium or mild so wife and daughter will eat it)
        One beer, flat (leave out in open glass overnight to get it flat)
        Carrol Shelby’s Chili Mix
        Optional – 2 cans Bush’s chili beans, medium hot

        Directions:
        In a chili pot, brown meat in olive oil and salt. Drain unwanted fat. Once browned, add copped peppers, Shelby’s main chili mix, Shelby’s cayenne pepper, and beer. Bring to a boil and simmer for 5-10 minutes. Add in salsa and optional chili beans. I know beans are a taboo for Texas chili. I only use them if my wife is eating, she likes beans in her chili. Cover and simmer for one hour, stirring occasionally.

              Sense we finally recieved some "cold" weather I definietly want some chili... Thanks for seom good starts to recipes...

                CHILI
                3-4 pounds of coarse ground deer or other meat (needs some fat so add some beef fat if using straight deer)
                60 ounces of tomato sauce
                1 large onion (diced)
                2/3-cup of Red chili powder
                2-tablespoons Paprika
                2-teaspoons Cumin
                4-teaspoons Oregano
                1-teaspoon Tabasco sauce
                1½-tablespoons Garlic powder
                ½-teaspoon black pepper
                Approximately 1 ½ cups of water
                Add salt to taste
                Add Cayenne pepper to taste
                Brown meat in skillet and drain grease
                Add to large pot
                Stir in tomato sauce
                Add all dry ingredients stirring them in as you go
                Add water slowly until mixture is liquid
                Cook on high until boiling then turn pot on low, let simmer for as long as you can stand it; the longer the more tender the meat, and better the taste. I usually cook mine for at least 4 hours. (8 in a crockpot)
                Stir every few minutes

                  have this chilli in the pot simmering right now. So far it's awesome. I added an extra onion, green chillies, and 2 cans of ranch style beans. The wife says its amazing. She doesn't want to wait till its finished simmering.
