    For the guys that make jerky....

    Do y'all boil the meat or pre cook it at all before you dehydrate it? I just got a dehydrator and have some venison I want to make into jerky but would like to do it without the E. coli and his buddies. Any tips and tricks is appreciated!

      I grind it, mix my seasonings and shoot it out of a jerky gun. Or cut into strips marinade and dehydrate. I've never pre cooked and its always came out great

        No pre-cooking or boiling. Just dry it until it's dry, not just "kinda dry". Salt is a preservative as well. Use some in your seasoning.

          Thanks guys, that's what I was thinking but when I started looking up some info on making it on the Internet I started reading things that made me second guess my tactics.

            I like to marinade mine for at least 24 hrs. And put the strips on the smoker for 2-3 hrs. Then, pull from smoker and finish on dehydrator.

            Only cause i prefer pecan smoke over liquid smoke.

                Either freeze it or put it in a pillow case on the top of the fridge. Will rot fast in a plastic bag.
