I know some guys aren't all about making homemade dumplins, my FIL told me he uses Pillsbury buttermilk biscuits.. Flattens them out and cuts them up into strips and drops into the boiling water. I haven't had this but sounds like it would work.
I've had dumplings made like this, and found the density of the dumpling just wasn't right. They aren't bad, I just prefer a denser dumpling.
Because of limited counter space, I don't roll out and cut into strips. I just roll into a 1"ball then smash flat to ant 1/4" thick. Like a "dumpling disc"
I use Flour tortilla mix, follow the direction as making flour tortillas plus add a table spoon of baking powder, then roll out and cut into strips as noted above. Sometimes serve with whole corn, just go together, Otherwise basically the same recipe! Good Job NS!! My favorite winter dish next to chili, gumbo, etoufe',.........
