    Fried squirrel and roux gravy!

    This is one of my favorite ways to eat squirrel, try it and you'll see why!

    Ingredients

    3-4 squirrels quartered
    1 onion
    1 bell pepper
    4-5 cloves of garlic
    2 celery stalk's
    2 egg's
    3 tbsp milk
    ragin blaze seasoning to taste
    salt and pepper to taste
    flour
    bacon
    oil

    Cooking
    cut up two pieces of bacon and fry in about 1" of oil
    Season squirrel with ragin blaze, salt and pepper
    mix two egg's and milk in a bowl, dip squirrel in mixture and coat with flour
    fry over medium heat until golden brown and set aside
    Cut up onion, bell pepper, celery and press or smash the garlic now mix it in with the used oil and cook until wilted and little soft
    add about 1-1/2 cups of flour and continue cooking on medium heat until the roux start's to take on a dark color (i like my squirrel roux a little lighter than some)
    Once roux is brown start adding water, it's going to thicken quickly so just keep adding water and mixing until you get a thick gravy
    I tranfer the mixture into a bigger pot and add the squirrel to the mixture along with seasoning to taste. Just fix it up until you like it.
    I continue cooking for another couple hour's over low heat.
    You can make a bed of rice and throw on some squirrel and gravy!
    ENJOY!

    Feel free to add some other ingredient's and spice it up.

                I do that with rabbits. Not enough meat on a sqirrel for me.

                  how do the bones hold up? I tried something like this but without frying the rabbit. There were plenty of little bones that fell out of the meat while cooking, so does the frying help keep everything together?

                    They do fall out sometime's but thats the price you pay for tenderness. lol. I try to cook them just long enough to stay together so I can eat it similar to a frog leg. The frying just add's flavor and the breading come's off in the pot and make's it soo much better imo
