Easy Peanut Butter Cookies

I made these cookies to take to the Montgomery TBH get together and they were a big hit. I could not believe how EASY they are to make and most of all they do not contain flour.

All you need is
1-egg
1 cup creamy peanut butter
1 cup sugar
1/2 cup chopped cocktail peanuts
1-teaspoon vanilla

Heat oven to 350. In a large bowl, beat the egg with a mixer until foamy. Add remaining ingredients and mix well. Shape into 1" balls. Place 2" apart on baking sheet and flatten with a fork in a crisscross pattern with the tines of the fork.
Bake for 10 min. or until lightly browned. Cool on baking sheet 1 min. then remove to wire racks. Cool completely and enjoy!

just put em in the oven...no creamy peanut butter though so crunchy it is

Crunchy peanut butter will make them even easier...you won't have to chop the peanuts
