This is a staple of the lowcountry of South Carolina. The following recipe is pretty good...
Ingredients:
6 tablespoons of butter
6 tablespoons of flour
1 medium onion, finely cut or grated
2 cloves of garlic
2 quarts of half/half cream
1 pint of heavy cream
1 cup chicken broth
1 teaspoon hot sauce
3 teaspoons of Worcestershire
1.5 teaspoons of Old Bay seasoning
1 teaspoon of salt
1 teaspoon of pepper
1 cup of sherry cooking wine
1.5 pounds crab meat (with roe is possible)
2 tablespoons of fresh chives (chopped)
In a large stock pot melt the butter on medium heat. Add the flour once the butter is completely melted. stir with a whicsk until it creates a paste. Cook for an additional 2-3 minutes then add the onions, garlic, and salt and pepper. Cook together until the onions are well done, but not browned (about 4-5 minutes).
Add in the half and half, stirring gently with a whisk to insure that it does not lump. Add in the chicken broth, heavy cream, and cooking sherry. Stir gently with a whisk for 3 minutes. Add in the Worcestershire, Old Bay, and hot sauce.
Cover and simmer for 15 minutes, then add the crab meat, stirring well. Simmer another 20 minutes.
Remove the cover and check consistency. The soup should be moderately thick, but not gummy. If necessary, simmer an additional 10 minutes with the cover off to thicken. If the soup becomes too thick, or when you re-heat later, use additional sherry cooking wine to thin.
Serve the soup into bowls and top with fresh chives.
* Note *
She Crab soup is called "she crab" because this recipe traditionally has used female crabs with roe. However, it is not absolutely necessary to have crab roe for the recipe (this can be difficult to obtain). Fresh crabmeat from the grocery store will work just fine. If fresh crabmeat cannot be found, imitation crabmeat (usually whitefish) can be used. In order to use imitation crabmeat, put it into a food processor and finely chop it first.
Some people use boiled eggs, finely grated, to substitute for the roe and that works very well as well. If used, add it with the crab meat.
