I searched for kabob recipes the other day and found this on Pinterest except I changed it up a bit.
Ingredients:
Skewers (if you use wood, be sure to soak them in water for several hours)
Boneless skinless chicken breast cubed in 1/2-1 inch pieces.
1/3 cup vegetable oil
1/3 cup soy sauce
1/3 cup honey
Black pepper
Vegetables of your choice- I used red potatoes, mushrooms, bell peppers, red onion, and zucchini.
My husband also wanted some beef- soo I just used tenderized stew meat 1/2-1 inch pieces.
Bacon strips cut in half
Mix together the oil, soy sauce, honey and pepper and marinate the chicken and beef in it for atleast an hour. Save marinade. Slice your vegetables in about 1-2 inch pieces.. If you're going to use red potatoes.. Boil them so they become a little tender.
Oil your grill grate and preheat the grill and set around 300*.
Thread your vegetables and meat alternately on skewers. I used the bacon and wrapped around the chicken pieces. Don't overstuff the skewers... I put about 8 pieces on ours.
Place skewers on the grill and baste with left over marinade frequently and turn. Grill for 12-15 minutes.
