What you will need:
1) London Broil
2) Eastman Outdoors Jerkey Cure and Seasoning (I use the Hickory and the Mesquite) - You can find this at most Walmarts

How to prepare:
1) Trim all the fat off of the meat
2) Slice meat into 1/8" cuts
3) Put the slices into a bowl
4) Add Jerkey Cure and Seasoning (note: the package does 5 lbs however most London Broils are approx 2.5 lbs. Use appropriate amount of seasoning for the size of the London Broil that you selected)
5) Add black pepper to taste (I use ALOT)
6) Mix well and refriderate over night
How to cook:
1) Preheat oven to 170 degrees
2) Poke a tooth pick through one end of each slice of jerkey
3) Place each peace of jerkey into the oven rack allowing the jerkey to hang
4) Vent oven (I use my salt shaker to depress the light button and it allows for about a 3/8" gap to release heat)
5) Cook for 8-10 hrs
6) Remove from oven and remove toothpicks
