    Chicken Thighs whatcha got?

    I have some chicken thighs in the sink. I can bbq sauce them and grill. But wondering what else yall do with them. so whatcha got?

    i like to put siracha sauce on mine and then grill them..

      I smoke chicken quarters at least once a week.

        Put in a ziplock, pour in a big can of pickled Jalepenos juice and all. Marinate over night, season, on the pellet grill 350-375 until done.

        oil and Italian dressing mix packets makes a good marinade as well

          Bone-in or the boneless/skinless?

          If boneless.... I prefer grilling vs smoking to crisp up all that good fat that thighs have. Especially if marinating. The hispanic in me prefers a red marinade similar to that you see at the meat markets. Just a tablespoon of achiote paste plus any fruit juice of your choosing. Pineapple, grapefruit, or even the goya peach or mango nectar in the blue can. Add your favorite seasoning during grilling. The best chicken "fajitas" you'll find. (i add quotations because fajita is cut of meat... not flavor profile. Irks me.)

              Season with Great American seasoning and smoke at 300 for about an hr or until you hit 162*

                I tried this one recently with just thighs. Pretty dang good.

                CHICKEN STEW
                HymelsKajunKitchen recipes
                - 2 Yellow Onions
                -1 Bell Pepper
                -2 Sticks of Celery
                -1 bunch of green onions
                -4-5 lbs of Chicken (Legs, Thighs)
                -3/4 Cup of Vegetable Oil
                -1 Cup of All Purpose Flour
                -4-6 cups of water cover the meat fully
                -Cajun Seasoning for chicken and stew to taste
                -1 Tablespoon of Parsley Flakes
                -2 Tablespoon of Minced Garlic
                -1lb Potato of Choice (optional)
                -Cajun trinity in a bottle for chicken and stew to taste
                -1-2 Cup of rice cook dat

                Directions
                Start by cutting all your vegetables up and put to the side. In a skillet or pan put a little olive oil down and let it heat up, while you wait seasoning your chicken with cajun seasoning, trinity powder, and dust with flour. Once your pan is heated up drop your chicken in and start browning on all sides. While that going get your roaster or black iron pot heating up then get roux started on a low heat. First place your oil let it warm up then drop in your flour and stir constantly until you reach a chocolate color roux. After your chicken is browned on all sides pull it and put it in a bowl then drop in your veggies to the pan to get them tender and get that chicken flavor off the bottom of the pan once softened put your mined garlic and cook till fragrant. Next up put your veggies in the roux and stir all around then slowly start adding in your stock and water. Once it all incorporates bring your stew to a boil then cut back to a simmer. Put in your chicken, cover the pot and let cook for 2 hours on low. Service it up with some rice and Baw Dat Good Yeah!!!​

                  so. I went supper lazy and it came out pretty dang good. I had boneless skinless thighs. I seasoned them with a little olive oil, hit them with fiesta chicken rub and ranch salad dressing package. Then baked at 375 for 45min. A side of mashed potatoes. Took me longer to figure out what to do then to cook and clean up. They were good but man after dinner. I went for a snack and man they were awesome. I need to mix of the seasoning better next time and season all of it not just the tops. I was lazy.

                        slice of mozzarella cheese
                        Slice of jalapeƱo
                        wrap in bacon
                        season to taste
                        smoker at 300 for roughly 1.5 hours

                          I am not sure why I have not been a big chicken thigh buyer for all these years. Lots of ways to cook them. relatively cheap and hard to screw up.
