    Dried Deer Sausage?

    Hey guys

    Does anyone have a good process to make dried sausage?

    I've done it a few times. Nothing more than finding a recipe, grinding, mixing, stuffing, smoking overnight, let hang for a couple weeks. We leave ours in the smokehouse until it has dried enough.

      Tagged. I know a walk in cooler with a dehumidifier is the trick, and that there is an art to how much to lower humidity over time or the outside dries first. I don't have the details or I would share but the best I have had since open air dried 35 years ago was made this way.

        You don’t want it too dry- or maybe You do ! A lot of these processors ruin it as far as I’m concerned by removing all of the moisture!
