    Southwest Border Style Chili

    I am moving this to Recipe Forum from Around the Campfire-

    Southwest Border style chili!

    1# ground beef.
    1 large sweet onions
    1 can dark red kidney beans
    1 green and red pepper
    1 small can of tomato paste
    1 large can of diced tomato
    1 1/2 cup of white rice
    Sharp cheddar cheese
    Med size bag of frito chips

    Cook the meat until brown
    Boil rice

    Put everything else in a pot including chopped onion, red/green pepper. I usually fill up the small can of tomato paste with water two time into pot.

    Add little water as needed after simmering while rice and the meat are cooking. Spread evenly on top with chili powder and stir until its disperse evenly.

    When rice and meat is ready, put in the pot and mix it up real well.

    Let it simmer and stir regularly for about 15 minutes then turn down the heat to low. Spread sharp cheddar evenly on top of the chili, cover with lid. Wait until the cheese is melt then spread the crushed frito chips evenly on the top. I usually crush the chips while its still in the bag.

    Turn the heat off and presto!

    You can add minced garlic, pepper, salt, crushed red pepper and other seasonings to your preference. I use pepper, minced garlic, garlic powder, crushed red peppers.

    This will serve approx. 8 servings.

    To make 2x to each for double servings.

    You can use different meat as well. Ground turkey, vension ground.

    Whatever appease your taste buds!

              i make some pretty mean chili, but Im gonna have to try this with the rice.
