    Pig in a pot (need recipe)

    Not really wanting to fire off the grill due to the wonderful weather but i gotta eat! I got a crock pot and a 40lb piggie. What you got?

    Here's my go to piggy in a pot...

    Crock pot pork roast

    - 1 can cream of mushroom
    - 1 can cream of chicken
    - 1 can rotel
    - 1 can of mushrooms
    - 1 sweet onion (diced)
    - 3 red potatoes (cubed)
    - 2 jalepenos (de-seeded and diced)
    - 1 yellow bell pepper
    - 1/2 a beer
    - 1 two to three pound pork roast seasoned with season salt, blaze, and pepper (boneless)

    Mix all ingredients (except roast) together in a bowl. Pour half of mixture on bottom of crock pot. Place roast on first layer and cover with remaining mixture. Cook on low for 10-12 hours. Shred pork in crock pot and serve like carne guisada over totillas.

              Put it on about 7 last night and had it for a late night snack. Sprinkle with Tony's and pepper.

              It is very good, but tums are required! Eating leftovers now

                  Pulled pork:

                  Small roast and a 16oz bottle of rootbeer. Put both in crockpot and cook 4-6 hours (155 internal cook temp)

                  Drain, shred, and top with your favorite BBQ sauce.
