    Whole deer shoulder recipes?

    This last spring I saw a recipe that used a whole deer shoulder, and it looked reaaly good. The problem is I don't remember what the recipe was. I always trim the meat off the shoulders for burger or sausage, so I didn't have a shoulder when I found the recipe. Now I have whole shoulders, but no recipe. Does anyone cook whole deer shoulders?

    I'm with you only I have a couple of whole hind quarters I would like to pit cook (hole in the ground pit). I'll do a search!

      Have you thought about cooking one in a smoker? I tried one last year with just some store bought rub (for "seasoning") and it turned out pretty good. I just tried it that way kind of on a whim. Also my brother in law does a lot of cooking with a smoker and he is going to try a couple of them this year. He has been experimenting a lot and has it down pretty good. I will let you know how they turn out as well. Just a thought.

        Deer is lean meat. I cook big pieces like shoulders and hams in as much moisture as I can, usually in stews or braise (tight lid) in the oven with some beef stock, onion, garlic, thyme, bay leaf, red wine or a beer, add potatoes and carrots for the last hour so they don't get too soft.

          I cooked a whole shoulder last year on my smoker, and it turned out great.
          Use your favoite rub and cover the shoulder
          black pepper to taste
          put the shoulder on the smoker (temp 230-260)
          Smoke it for an hour to an hour and a half
          Put it in an aluminum pan
          add a whole chopped onion
          jalapenoes (as many as you want)
          add a bottle of your favorite BBQ sauce (cover the whole shoulder)
          pour a full beer to the bottom of the pan
          cover with foil and place back on the smoker for 3-4 more hours at the same temp.
          check periodically and add bbq sauce when needed.
          When done the meat will fall off the bone and is delicious, i also like to put the meat on a tortilla with the onions and jalapenoes and eat it that way. Hope this helps!!

                  TC, I put a shoulder on the smoker yesterday and pretty much did what you said. I smoked it 1.5 hrs with mustard and Williams BBQ rub. Then put it in a pan with a beer, a bottle of Stubs BBQ sauce and a half bottle of Sweet Baby Rays. I poured the sauce over the shoulder and let it run down in the pan. I put the peppers and the onions also. Then smoked it another 3.5 hrs. All the smoking was done at 250deg. It was the best deer shoulder I have ever eaten. The wife and kids loved it just as much or more than I did. Thanks for the Idea.

                      I am at college and don't have a smoker. Any of y'all cook a shoulder in the oven like a roast?

                        Yes, you can bake it in the oven the same way. Be sure you add fluid (i like chicken broth but water works) and keep it covered at all times.

                        I often keep the shoulders whole and cook them in the crock pot (like beef stew). I have to bone out the biceps/triceps part so that it will fit in the pot, but that only takes 10 seconds to do.
