    Cabbage Soup

    I noticed what a stir the post on cabbage w/sausage made, so though some of you might enjoy this recipe. It is a 'yankee' recipe--hunting buddy's grandfather from Michigan originated it.

    Lots of ways to tinker with it too--spices, chili pequins, jalapenos, etc. Original recipe called for using smoked pork hocks, but not enough meat on 'em for me.

    Cabbage Soup

    1 cup cubed cured ham
    1/2 head shredded cabbage
    2 med onions sliced thinly
    1 cup sliced carrots
    2 Tbsp cooking oil
    2 sticks celery w/leaves
    2 cans chicken broth
    1 (or 2) cans tomatoes
    3 cans water
    1 can white beans (optional)
    3 cloves minced garlic (optional)
    Salt, pepper to taste

    Prepare all vegetables per above. In large soup pot, saute onion in 2 Tbsp oil until tender. Add remaining ingredients EXCEPT tomatoes, salt, and pepper. Bring to brisk boil, then reduce heat to simmer for 20-30 minutes. Add tomatoes, salt, pepper, other spices (Cajun Blaze maybe?) to taste and cook another 10-20 minutes.

    I can't tell you how to serve it--with cornbread maybe? I also like to put about a teaspoon of vinegar in a bowl--makes it sort of like Chinese Hot & Sour soup which I like.

      never had cabbage soup before...sounds interesting...may have to try it one day.

          Mmmm - this sounds great. Will try this variation on one of household's favorites. I usually sauté the onions in bacon fat, add the cabbage and sauté some more before adding other liquid elements. That bacon flavor makes up for not using ham hocks. I would serve that on rice. A cheesy side works well, like a cauliflower cheese bake. If I can just figure out how to make this and be just as tasty on my Weight Watchers plan...

            Speedmaster--if you leave out the beans and use low-fat ham, the calorie count isn't bad--but the bacon fat has to go too!!

              Yes, it would be easy to get the cals down on that one. Lose the bacon fat and add more seasoning. My guys wouldn't be so excited about it, but their arteries sure would.
