One of my favorites is a crappie melt. Broil fillets in oven w Ragin Blaze and butter. While that's going sauté some onions and brown a buttered slice of rye or sourdough bread. Add the fish. Onions and a slice of Swiss cheese. Top with buttered piece of bread and flip till other side of bread is done and cheese melts. Open and top with 1000 island dressing

About how long do you broil the fillets? Until crisp? Sounds delicious.

We call them sacalait.
And they make one helluva Courtbouillon.
Plenty of recipes on Google if it peeks your interest.
Chefs John Besh and John Folse are two I like.

I will check those out!! I trade a guy for some catfish fillets cause my crappie always fall apart when I do this! Maybe I just suck at cooking it?
