I've found that I like to let the final 'sauce' simmer for a bit. Thickens it up a bit and gets the chicken a little more tender

Made this for dinner yesterday.

It's a keeper for sure.

Note: I used thigh meat because hubby doesn't like white meat.

Cajun chicken pasta
