    Boiling Crawfish

    Thanks to Alien750 for this recipe. We did mudbugs last night and I followed his recipe. They were so soft they were creamy. Just good eats...

    I Start off by putting them in a large cooler and sparying them and rinsing them off until the water is almost clear coming out. {I did not use salt in the water}

    Fill your pot only about half full with water and crank up the heat. Once it is boiling drop in 2 sticks of butter, 2 boil bags, a 1-2 ounces of liquid boil, and some powder boil. Put in your small red potatoes, onion, and garlic. Let them boil for about 10 min, check the potatoes, you want it just before they are done. Fill you basket with Craw daddy's and add the mushrooms and sausage in the top, Squeeze in a couple of lemons or oranges. The water will stop boiling as soon as you drop them in the water so keep an eye on them and once it starts boiling again cook them for 7 min and then kill the heat and put in the corn. Let em sit for 5 10 min. Dump them in an ice chest and then sprinkle with more seasoning and shut em up. Let them rest about 10 minutes and they are ready to eat.

      Similar to how I cook them except use my own season products

      I cook bugs for 5 min. Then soak for 15 min

        We cook the crawfish for 7-8 minutes and then turn off the fire and let them soak for 20-30, longer they soak the spicier they get. Shrimp for only 3-4 mins. Good eats

          Same here, but I only boil bugs for 2-3 minutes and then let them soak for 20-30. If I have a lot to cook I'll have 2-3 pots going and empty water and all from one pot into the cooler, and just the crawfish from the other pots. That way all the batches can soak while I am still cooking in the other pots.

          I enjoy cooking them as much as I do eating them.

          And ditto on the 'shrooms!

            Another tip is if you've got younguns around that don't care for crawfish, throw some wieners in there. Obviously you don't want them in the spiciest batch you're cooking.

            Once you put the bugs in and the water begins to boil, throw the wieners in. 5-7 minutes of boiling, kill the fire, then about 15 minutes of soaking. Don't let them soak too long, they'll get pretty spicy.

            And I'm still a fan of making tater salad out of the left over new taters the next day.

            Good stuff!

                  THIS

                  A little less boil time and more soak time makes em more juicy and spicy.

                      After you're done with all the cookin get your water boilin again and throw a couple of whole heads of cauliflower in it and kill the fire and let soak. The longer you leave it the better it is. It will be fire red when you pull it out and will cause consumption of large amounts of adult beverages. Dang now I made myself hungry

                            I guess thats my proble, I dont let them soak very long. I usually cook around 150 pounds and I only have 2 pots, so letting them soak takes too long for me to cook everything.
