    Pinto Bean Recipe?

    Anyone have a bean recipe they think will place in a cook-off? I'm gearin up for ours next weekend and want to try a different recipe.

    We are cooking several pots and then deciding which one to send in so I figured I'd mix it up a little this year.

        Yessir!! The Pearl Snap Cookers... we are usually on the far end near the port-a-cans where they let you drive in. We are the last team on the end in the middle.

          Put Chorizo in them! Not many people do that so it is unique and **** good too!

            This year I will be with the Lone Star Cookers. Should be right beside you. Pearl on one corner and LSL on the other, sounds like a party.

              They havent sent us our wristbands or map yet but we've been in the same spot for 5 years.

              Yessir... I think I might have one or two... swing by.. we always have a crowd.. cant wait!!

                    I don't know about award winning but darn good...

                    cosmiccowboy pinto beans

                    Fry one pound chopped bacon ends with one large diced yellow onion till all fat is rendered and bacon is crisp, add several pods of crushed garlic towards end. If you really want to go "over the top" also add a couple heaping tablespoons of lard.
                    Put two pounds (cleaned) beans in bottom of pot. I don't pre-soak
                    Pour cooked bacon/onion over beans (don't drain)
                    Add one can Hatch diced tomatoes and green chili (with juice)
                    Add one can Hatch diced tomatoes and jalapeno (with juice)
                    Add 6 tablespoons Bolners Fiesta bean seasoning
                    Cover with water about 1 1/2"
                    bring to a rolling boil then simmer for at least three hours
                    Add salt right at the end to taste.

                    If you have to add water add hot water.

                      Boil a few links of sausage, then use that water for the beans, add all the voodoo to the sausage broth, outstanding !!!!!!!

                        Pretty much same deal except just reg old rotel. I also like to add whole stewed tomatoes and a bit of cilantro. Fiesta brand seasonings are amazing.

                          Just make sure you only put in 239 beans. One more and it will be "too-farty". ( I apologize, but I've been waiting for years for the opportunity to use that joke in it's proper context. Carry on.)

                            I used to use Rotel but I think the quality control on the Hatch brand is a lot better...everything is finely diced and you never get stem bases, etc. with the Hatch like you do with rotel.

                              WIll give it a shout. I never really seen it. Ihave had the stems you are talking about with rotel. But hell my wife usally wants to buy hill country fair everything. Like my FIL says its like you dont have two nickels to rub together.
