I would give out my chili recipe but I can't. You see I have never murdered anyone and I aint about to start now.
I will give out one secret. Make your own chili powder. Go to a mexican market and buy dried pablano's called ancho chiles, dried new mexico chiles, and dried cayenne or de arbol chiles. If they are fresh dried they will still have some moisture in them. Use around 4 or 5 each anchos and new mexico's and 5 of the smaller cayenne or de arbol chiles. Remove the seeds and stems and flatten them. Roast fresh dried chiles at 300 deg on a sheet in 5 minute increments removing the chiles as they roast to a crisp. once they are all finished roasting put them in a blender and pulse them a few times. You can use a food procesor if you like. Pour the powder into a bowl add 1/4 tsp of cumin, 1 tbsp masa flour, 1 tsbp flour, 1 tsp garlic powder, 1 tsp onion powder and 2 Tbsp secret ingredient (thats the one I can't tell you about) Using everthing I gave you will be one kick *** chili powder. The secret ingredient puts it over the top and wins me cook offs. This is enough to season 4 lbs of meat. I usually double it and make a large pot with about 8 lbs of meat. You can use any dang meat you like, you can mix them like I do. I made some last Christmas from elk, venison, boar, and beef.
Another thing, I know lots of Texans who use beans in thier chili. Tant nuthin wrong with beans. Its what you like. I make my chili with and without. Depends on whether Im going to be in public after I eat or not. Not a good Idea to eat a big bowl of chili with beans before you go to church if ya know what I mean.Last edited by SgtRock; 03-25-2011, 09:54 PM.

Has anyone ever won a chili cook off with beans in their chili? Chili has NO beans!
Whew... now that we got that out of the way.
Your recipe sounds pretty good (minus the beans of course) but I would recommend to anyone, try using your favorite spicy bloody mary mix instead of tomato sauce. (same amounts, just use the mix instead of the sauce)
