IDK if anyone has ever been to Austin's BBQ in Eagle Lake but they have a side of Rice Salad that is amazing. Does anyone know what I am talking about or ever heard of a recipe like this? It's like potato salad but with rice. Recipes??

Never been to Austin's. I do have a Rice Salad recipe. Don't think of it like potato salad but, here it anyway. It is served cold.
Mix the following ingredients: Black Olives, Green Olives, Green Onions, Celery, Small Can Mushrooms, Small Can Leseur Peas, Salt, Pepper
Add One Cup Minute Rice (cooked) and Italian Dressing
Mix
Refrigerate

rice, boiled eggs, chopped up dill pickles, miracle whip or mayo whichever u preferr, yellow mustard. Just boil up the rice and chop the eggs and dill pickles, add mustard and mayo to taste with salt and pepper, I always add a little more pickle juice just cause I like it that way, wife likes garlic powder but I can do without it. More or less just like potato salad 'cept with rice.
This how I learned to make it growing up in El Campo no taters down there. LOL

This is the true recipe for Famous Rice Salad
Rice Picnic Salad
This is truly a labor of love and DELICIOUS
*best to double or triple and freeze whats left*
3c hot cooked long grain rice (HINT:mix all ingredients below then make sure Rice is really freshly made and warm when combining (suggesting doing it last) all ingredients so it absorbs all flavors
1/4c. French dressing
1tsp.salt/ 1/2tsp.pepper/fresh ground
**Important to get all below close to size of rice
1 c. chopped (fine) celery
1/3c. chopped fine yellow onion
1/3c. chopped(fine) green pepper
1/3c. sweet relish
1/2c. chopped (fine) sour pickles
1/2c. chopped pimento
3hard cooked eggs chopped fine
3/4c. mayonnaise
Combine all ingredients toss together then add to warm rice and toss lightly with fork. Refrigerate thouroughly for at least overnight (better 24 hours, keeps well in sealed jars. Great with picnics, Bar-b-q's, steak dinners to lighten the meal excellent side dish. Or straight out of the Jar like me..
