ok after paying for years for someone to do our deer jerky I went out and bought my own dehyrator($50) and I have to say very happy with out come !! it took 4 hrs to dry , I marinade (Axis) for 24 hrs .Steps #1 clean meat cutting out all fat then into 1/4 strips #2 washed meat in a iced down water mixing bowl #3 placed into a plastic mixing bowl adding meat tenderizer ,cracked pepper,cure,worcestershire(xtra tenderizing) and a couple of my dads ole secert spices (LOL) #4 placed into acouple of zip lock bags and placed into refrigerator for 24 hrs #5 placed onto racks of dehyrator make sure to spacem 1inch apart and I checked on them about once a hour to get feel for drying time 4 hours later ,DONE !! # 6 lettem kool down for 30 mins and taste tested and placed them into a zip lock bag . you can add whatever spices you perfer, Iam planning on trying canjun,teriyaki mix next one ! nothing like sunday NFL and jerkey !!
