Venison and Wild Pork Meatballs w/pasta and your choice of sauce

    Venison and Wild Pork Meatballs w/pasta and your choice of sauce

    Made this last night – always a big hit

    *Mix together 2/3rds ground venison, 1/3 pork breakfast sausage
    *Spread meat mixture in a flat layer in a large dish
    * Add chopped fresh mushrooms and green onions
    * Add shredded Mozarella cheese
    (you can add seasonings but I've found the sausage provides enough spice)
    * Knead all this together till the added ingredients are evenly dispersed through the meat.
    * Roll into golf ball sized balls (I’ve found this is easier if you put a little olive oil on your hands first)
    *Get a skillet hot and brown meatballs on all sides – turn down heat and let them cook through, then drain on paper towels
    * Boil spaghetti or preferred pasta
    * After draining the pasta add it back to the pot, along with the meatballs and whatever sauce you like sauce (I use pesto, alfredo or traditional spaghetti sauce) Toss to cover
    .
    They also make great meatball sandwiches!

    Sounds good. I have a acid issue with red sauce. A table spoon of sugar balances it out, and I can eat spaghetti again....

      I have been browsing through the recipe forum for an hour or so trying to get new ideas and just now saw this. I dont know how the heck this got past me in July, but I'm gonna give this a try when I get home! It sounds great!
