    Two Hour Smoke???

    Tomorrow night the wife is out of town so I am going to get the smoker going. I normally get home around 6, so I don't want to smoke anything that will take longer than two or 2.5 hours. Anyone have any suggestions (other than beer butt chicken) for what I can smoke that will cook in that time frame?

    Small pork roast for pulled pork.

    Pork tenderloin wrapped in bacon.

      Smoked Salmon......210 degrees for 1 hr 45 min.

        The Salmon sounds great!
        You might try country style ribs. 225 deg. for two hrs. first hour in foil next hour out of the foil. Works good for me.

                    Quail would be just about right for a two hour smoke, or you could go with a bacon wrapped tenderloin.
