From what I've heard, I dont think you can make jerky from pork. I remember hearing something about it not being safe to eat.

They sell dried pork sausage in stores. Is that any different than pork jerky from a safety standpoint?

And then cut it into strips with the grain and dry it.
It won't kill you and the flavor should be just knock your socks off intense.
