    jerky making

its getting expensive at $6/pd for deer jerky, especially when i'm supplying the meet. looking at purchasing dehydrator and doing it myself. i've used the small round ones, but it seems like it would take forever to make a lot with them. don't know about purchasing a commercial grade, that might be a little much. any suggestions on brand, type, size?

I have two of these. You can buy more trays to expand the amount that you can dry at one time. I have about 20. You can make a lot of jerky this way.

I have dried mine in the oven set at 115 over night and it worked good for me. It was a gas stove and I don't know if that would make a difference vs electric, but it's an idea.

My wife bought me an Excalibur dehydrator for christmas one year and it ROCKS. You can dry a batch of deer jerky in about 6 hours in that bad boy. I use it all winter long dryin jerky, fruit, pepperoni sticks, etc. Plus it's easy to clean

Ive got the same one scotty has. works really well for jerky. I have made a ton of it. Its easy to do. The extra trays are a must tho. Otherwise you will never get done.

Shane posted his oven recipe over in Around The Campfire a few weeks back. Its called Easy Jerky. Might give you some ideas.

                  Hot and spicy jerky

                  5 lbs. Venison
                  1 cup worchestershire sauce
                  ½ cup soy sauce
                  1 tsp. Garlic salt
                  1 tsp. Onion salt
                  1 tsp. Spicy brown mustard
                  ½ tsp. Coarse black pepper
                  1 tsp. Chili powder
                  ½ tsp. Cayene pepper
                  1 tsp. Tabasco sauce

cut venison into ¼ inch strips. Combine ingredients for marinade. Marinate for 24 hours. Mix the meat in the marinade often. Place in a dehydrator for about 6-8 hours.

purchase a small smoker from academy, you can do it yourself and tastes way better than dehydrated made jerky

If you're gonna buy a dehydrator, I wouldn't buy anything but an Excaliber. I've got one. I've used every other type/brand of dehydrator I've ever seen, and none work as well as the Excaliber. They cost a little more, but they are well worth the money.

Try this before you buy a dehydrator. I made some Jerky using this recipe and it was AMAZING. I used the High Mountain Peppered seasoning and cure.

                              Poor mans Jerky maker..

                              1-Box Fan
                              2-A/C filters with v grooves
                              and a couple bungie cords.

season jerky, lay jerky in grooves of one filter, lay other filter on top and strap to fan. Turn on low until done. Usually about 8 hrs
