    Well, I dont know the precise measurements so you have to bear with me.

    1 to 1 1/2 cup cornmeal
    2 Eggs
    1/2 tbs salt
    1/3 cup Cajun Seasoning
    3/4 to 1 Cup of Milk

    As many dove breasts as you care to cook
    1 jalepeno slice per breast
    Bacon slices (Dependent on number of breasts)
    Toothpics

    2 gallons of oil, (Veg, Canola, peanut, etc)
    1 Turkey Frier

    Heat oil in the turkey frier to around 300 to 350 degrees

    Slice dove breasts, and insert one half jalepeno slice in each side.

    Wrap 1/2 bacon slice around breast and insert toothpick through bacon, breast, and jalepeno.

    Mix cornmeal, eggs, salt, cajun season, and milk to create the batter. (Add cajun season to taste)

    Dunk prepared breasts in batter and fry until golden brown.

    Remove breasts and searve immediately.

    Have enough cold beer on hand to put out the fire!!!!!!

          A friend of mine told me to try: Equal parts of Pineapple Juice and Sprite. Marinate over night and wrap in bacon, then grill. Anyone tried this? I've only got 24 birds, so I'm not ready yet.
