If you are doing one that has a high fat content it pays to scald the hair off and leave the skin on. Results are typically very moist inner meat with cracklin skin. It's all about the prep and maintaining the right temperature.
Speaking of hikers why is it they never wear blaze orange?? Can't tell you how many times I've passed them on the trails.. I'll be decked out head to toe in orange (which i hate wearing) and theyll stroll by in shorts and t-shirts leading a pack of dogs around. Not only do they seem to have a loophole to the Blaze Orange rule, but they also can access the same lands for free that we must pay annual fees to use.. Nothing against hikers, but in my opinion we should all have to abide by the same laws of the land... What gives?

They don't have to wear their orange but I sure am going to wear mine. I personally met some of the Crazzies you hear about . Even had lunch with them at the Waverly House and Pizza Shack.
No email for me yet. Oh well, I just grilled up my last backstrap with a dry rub and made backstrap tacos with grilled onions and roasted jalapeño's. This makes three years in a row for no doe permit.
