Axis will have a dark line down the center of their backs and I like to think of their face as more "box-y". Coats will be a deeper red with more distince spots.
Fallow can usually be distinguished by their pronounced "adams apple", longer tail, and longer hairs extending off the end of the prepuce. During rut they urinate on their legs and bellies like red deer.
Sika deer (spotted) may look similar to axis, but will generally have a white rump patch outlined in a dark brown or black.
Japanese Sika deer are darker like a chocolate fallow. See description above for fallow and you should be okay.
