Setting for enlarging photos

Going to Zion NP and Grand Canyon tomorrow. What size setting will be best if I'd like to print some 8 x 10's or bigger?

You'll want the highest quality image your camera can produce, RAW is what it's called on Nikon not sure about the others. Also if you can control the ISO lower ISO speed will look less grainy when blown up. Use a tripod if possible as well.
