Being 75% German, she's got a tiny bit of a temper and will go Defcon 5 on you in a heartbeat
2) I really think she might be a leftie. runs on both sides of our families, and she uses her left hand more than her right (swinging at things, punching Daddy, etc...)

Yeah, I don't blame you for not trying. When they are comfortable and quiet, it's best leave well enough alone- especially with those german genes. I have a new baby too, and our pediatrician showed us the move-the-head trick. He called it a fencer's pose reflex, because folks thought it looked like a person fencing (swordfighting). I was proud of my wife when she corrected our pediatrician and said they should call it the Archer's reflex. But sure enough, he moved my sons head, and my son switched his arm stance.
