This ain't so easy but lessons were learned.
Had a good day Sunday Afternoon at North Shore Park in The Woodlands with the wife and 2 of 4 G-Kids. These Ring-billed Gulls were putting on a good show so I tried my luck with in flight shots. I'll list my thoughts at the end but welcome any other suggestions.

All shots roughly 220mm, ISO 200, F7, 1/1250 shutter, AV, with a Canon EF 100-400mm.
First of all with the IS setting left at #1, I may have gotten a little sharper results setting it at the #2 position. I was typically panning horizontaly and I forget about the #2 IS setting being designed to help with the horizontal movement.
Secondly this is not much different than shooting a shotgun. You have to keep following the target through pressing the shutter and following through with the shot. Guess which photo above would have resulted in no dinner had I been using a shotgun
Third, I may have wanted to boost the ISO to 400 and gain a touch in shutter speed.
Fourth, maybe a good tip. I adjusted my monopod to fit just inside my belt and then to a good comfortable eye level. This allowed me good movement both horizontally and vertically.
So, with seeing a bunch of room for improvement it's time for more practice
