You might try a different arrow. I have the same problems with gold tip velocitys, but the kinetics shoot fine.
Look up the center shot for that bow. Being a mathews I think it's around 11/16. You can just line the string up in the center of riser then down the center of arrow by looking at it this will be close.
Look at make sure the arrow is square with the string while on the rest. Get as close to the center of the burger hole.
Make sure the cam is in time. The cable should be in the center of the timing hole on cam. Doesn't have to be perfect, but if way out it makes a difference.
Mathews states to make the idler wheel to be straight at rest. Put there for now. Now shoot it through the paper. If not what you want play with hand grip first.
If same now look at adjustments. Also if your drawing to long you will have problems.
Adjust rest to get close as possible. Then do the yoke tuning as stated above for fine adjustment.
This is just a fast and rough statement to get you headed in the right direction. There are other adjustments but this will get you started

Cut the shaft to 28 inches, then start your tuning process.
A 29 inch shaft, (340 spine) is very long.

I have been shooting a bow for less than a year now and I tune my Elite my self. u was really nervous at first but it is nothing now. there are videos on the web and if you are not sure just ask. I made a draw board for around $40. I will say that I am really good with my hands. but better to be safe than sorry so if your not sure about something stop and do some research.

I agree I think that the spine is way stiff IMO I think the 5575 gt would be better for your set up.

You may be chasing your tail without someone to look at your form and bow and drawboard/press. I would probably guess it isn't your arrows, it may be your form, you can't tell with the bow tune without a press/drawboard. Bisquick's recommendation is the best, and long term fix. YouTube would have drawboard build and tune videos, I would think the Mathews site does too. You can also do a Yahoo search for "the nuts and bolts of archery", good recommended reading.

A 5575 or 400 spine will be too weak at #68 and 29 inches long with a semi aggressive cam. Have you tried 125 grain heads? Your setup may be a tad stuff now but I doubt it. It's worth a shot anyway.

If the spine is too weak, don't you want to decrease your tip weight?

                  Here's the deal.
A 29 inch arrow is a very long arrow for a 28.5 inch draw bow.
Gold Tip has recently come out with a .300 spine shaft due to issues with today's bows, and arrows over 28.5 inches in length.
In other words, a .340 spine shaft over 28.5 inches has been showing up WEAK with a lot of current bows.
Remember, stiff arrows rarely give us problems, and I happen to believe with the set-up the OP has, a .340 spine arrow at 29 inches long may be weak.
I think he has other tuning issues also, (maybe idler lean, maybe rest timing if he's shooting a drop-away rest) and/or cam lean, but not seeing the bow, it's hard to diagnose.
My post was to cut the shaft down to 28 inches, then we can pretty much eliminate the shaft being the problem.
At 29 inches, he could have a weak spine, not stiff.

I had weak spine issues with GT 7595s on my Iceman. Even going down to 64 #, it was still (.340 spine) showing weak with a 30" arrow (30.5 " draw). I went to a 28.5" 7595 and that fixed it. I think Rocky hit the nail on the head.

If you are in Mission you are only 15 minutes away from a decent bow shop. Point Blank in Pharr is a Mathews dealer and should be able to help you. Talk with Beto or Felipe and they will fix you up.
