Back on the grills and smokers so I decided to have a little fun with a Big Knife build after that last Japanese Gyuto project! Did a 10" full flat grind on this piece to be used as a brisket knife and had a blast along the way. Ended up using bolts and a mosaic pin and hand filed a vine pattern along the spine. I much prefer the accuracy and overall look of doing filework by hand with files rather than a dremel. The consistency in your design with hand files is much more precise and it doesn't look "choppy" like many of the machined pakistani and chinese junk we see flooding the knife world.
Used some Texas procured Mesquite with some beautiful figuring in the wood for the Handle. God's a pretty nifty artist if you ask me! Now, Just gotta get a big ol' brisket and put it to work if the price of them suckers ever go down! haaaaa.
