I just did 40lbs like that, but I must have done something wrong, when trying to fry mine it gets black really quick from the syrup I guess.......2 min in microwave & it's ok, but that gives a different taste.....any suggestions ???

I find I have to cook it slower and lower than store bought bacon, I guess because there so much less water in it. Does it taste burned?

Is your smoker made out of any sort of special wood or just pine

It's just pine, nothing special except that it was ultra expensive, I built it when we lived in Norway.

Yeah when it gets black it doesn't taste good at all & really chewy...... IDK, I,m gonna try another batch ( smaller ) & cut back on the syrup to see what happens

Smoke didn't take as good as the first batch, warm, humid weather moved in right after I started smoking, but I think it'll be alright.
