Awesome Chew, what kind of cheese did you use for the jalapeno and cheese sausage?

I got some high-temp pepperjack from Allied Kenco. Small cubes. I messed up and ran it through the grinder on the second grind. Lost the texture of the jap n cheese. But flavor is awesome.
