Best way I have found to cook garfish is to grind the meat and mix it with onion, bell pepper, and some mashed potatoes. Season to taste. Make a patty and fry. Makes a great sammich at the camp. Oh yeah, don't put the meat in water after cleaning if you plan to freeze it. It will turn to mush.
