    Secret to a great steak...

    Talk to me! I've cooked some good ones and some not so good ones, can't seem to get consistent. Share your secrets

    Has to be room temp set it out 3-5 hours makes the biggest difference no matter what your next steps are

                    Start with a good prime cut. You can muck up good cut of meat but a bad cut is mucked up from the start.

                        Filets at room temp. Set oven to 450. Heat cast iron skillet as hot as you can get it. Rub with oil and heavily salt and cracked pepper. Place in cast iron and don't touch for 60 seconds. Flip then and go another 60 seconds. Place a pat of unsalted butter on top of each and put the whole skillet in the oven for 4.5 minutes. Pull out and transfer steaks to a plate and pour juice over the top and let rest 5 min. Greatness.

                        I do this method with ribeyes as well, but increase sear time to 90 seconds

                          invest in a quality thermometer and KNOW the internal temp.
                          Baste in butter, garlic, rosemary.
                          remove from heat and let sit.

                          +/- 5 degrees can ruin a steak flavor, juices, texture
