    Texas A&M AgriLife Extension might also be a good resource. They should have some printed materials and perhaps videos, and might even have some demonstrations. They used to have anyway.

      Are you looking to pressure can things such as meat and vegetables ect. Or water bath can be things like jellies and jams?

          We just finished our first batch of jalapeno jelly... Man it is tasty too!! Got 12 little 1/4 pint jars out of 1 1/2 cups of peppers chopped up in the food processor!! Gonna try a batch tomorrow or next day and leave some of the seeds so it'll have a bit of a kick... This stuff is delicious! We had just over the 12 jar amount so put the rest in a bowl, opened up a block of cream cheese, made some "Melba type toast, even some crackers... It was a tasty feast indeed!!

            Mrs Artos is interested in canning for both storage & instant consumption...when she jumps into something she normally doesn't need my help but, REALLY appreciates the 411 out of TBH over the years on her projects.

            !8ncs, I did some searching & shared the other canning related threads from Michael & scotty as they has some goodies buried in them.

            I can hear my wallet screaming & why I started the thread...if she's gonna jump in, I wanna do it correctly.
